Pomegranate Breakfast Parfait

Ingredients

¾ cup vanilla or plain Greek yogurt
¼ teaspoon of cinnamon
3 tablespoons roasted pistachios
3 tablespoons roasted, salted pumpkin seeds
¼ cup granola
¼ cup pomegranate arils
1 ½ tablespoons pomegranate molasses or syrup

This easy breakfast is full of pomegranate flavor. The layers of red arils with greenpistachios and pumpkin seeds make it an ideal addition to your holiday. Multiply the ingredients for as many people as you need to serve and consider putting each out for guests to build their own parfaits.

Instructions

Stir together the yogurt and cinnamon in a small bowl.

To build your parfait, layer 1/3 of the yogurt in the bottom of a serving bowl or cup. Top with a tablespoon each of pistachios and pumpkin seeds. Top with 1/3 of the granola. Drizzle with 1/3 of the pomegranate molasses or syrup. Add 1/3 of the arils.

Repeat two more layers and enjoy right away.
