Dijon Chicken with Pomegranate Glaze
1 chicken (about 3 lbs.)
2 cups pomegranate juice
1 tablespoon brown sugar
2 teaspoons soy sauce
Split the chicken in half, brush heavily with Dijon mustard, and roast in a 500°F oven for 30 minutes. Pour pomegranate juice into a large skillet, and reduce it by half. Stir in brown sugar and soy sauce. Boil briefly, then pour over the chicken.
